Olivewood Ranch Harvest Muffins

Olivewood Ranch Harvest

Ingredients

1 3/4 cup Flour
1 tsp. Baking Soda
1/2 tsp. Salt
1/2 cup Olivewood Ranch Olive Oil
1/4 cup Light brown sugar
2 Large Eggs
1 cup Mashed ripe bananas
2 Grated Carrots
2 tsp. Orange Zest
1 tsp. Vanilla extract
3/4 cup Chopped walnuts

 

Instructions

Preheat the oven to 325 degrees

Line muffin tins with paper liners.
Whisk flour, baking soda and salt together in a small bowl.
In a large bowl, mix olive oil and sugar until throughly combined.
Add eggs and beat. Stir in mashed bananas, orange zest, carrots and vanilla.
Add dry ingredients to the wet ingredients.
Mix until smooth. Gently fold in the nuts.

Spoon batter into prepared muffin Wells.
Bake in preheated oven for 20-25 minutes or until the muffins are golden brown and spring back when touched.
Allow to cool for 5 minutes in the oven and then remove to a cooling rack.

Enjoy for a special  harvest breakfast treat!!
