Olivewood Ranch Zucchini Banana Nut Bread

Instructions

Makes 2 loaves

  • 4 eggs

  • 1 1/4 C.  brown sugar

  • 1/2 C. Honey

  • 2/3 C. Olivewood Ranch Kumquat Mandarin co milled oil

  • 2/3 C. Fresh squeezed mandarin juice

  • 2C. Shredded unpeeled zucchini

  • 3 1/2 C. All purpose flour

  • 1 1/2 tsp. Baking soda

  • 1 1/2 tsp. Baking powder

  • 1 tsp. Salt

  • 2 tbls. Finely grated mandarin peel

  • 1 mashed banana

  • 3/4 C. Chopped walnuts, optional

  • Heat oven to 350 degrees. Grease and flour ( with olive oil) and flour bottoms only of 2, 9X5 inch loaf pans. In a large bowl, beat eggs u til thick and light in color. Gradually beat in sugar and honey. Stir in oil,mandarin juice,and shredded zucchini.  Add the remaining ingredients and mix well. Pour batter into greased pans.

  • Bake at 350 degrees for 50-55 minutes or until a toothpick stuck in the middle comes out clean. Cool completely and wrap tightly in plastic wrap and stirs in the refrigerator.
