Olivewood Ranch Mandarin Kumquat Olive Oil Cake With Chocolate Ganache

Instructions

  • 1 1/4 C. all purpose flour

  • 3/4 C. sugar

  • 2 large eggs or 3 small

  • 1/3 C. Olivewood Ranch Kumquat Mandarin Co Milled Oil

  • 1 tsp. vanilla extract

  • 11/3 C. fresh squeezed mandarin juice

  • 2 tbls. finely grated mandarin zest

  • 1 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/2 tsp. salt

  • Ganache

  • 1 small pick high quality semi sweet chocolate chips. I like Guittard.

  • 1/3 C. Olivewood Ranch Kumquat Mandarin Co Milled Oil

  • Preheat oven to 350 degrees

  • Grease and flour pan

  • Mix together the sugar and eggs in a medium bowl with a hand mixer on medium speed until blended and light. Drizzle in the olive oil and vanilla and mix until light and blended. Add the mandarin juice and zest. Mix well. Sift together the flour, baking powder, baking soda and salt in another bowl. Add the flour mixture half at a time to the wet ingredients and mix on low just until incorporated. Pour into the prepared pan and bake 25 to 30 minutes. Let the cake cool completely. Meanwhile microwave the chocolate chips and olive oil on low in a microwave stirring every 20 seconds until well blended and shiny. Pour over cooled cake and decorate with mandarin curls.
